Soups

Herbal chicken soup

Ingredients :
   
  • 25g yoke chok (Solomon Seal Rhizome)
  •    
  • 25g tong sum(Codonopsos pilosula)
  •    
  • 25g wai san (Chinese Burdock)
  •    
  • 20g gei ji (Fructus Lycii Wolfberries)
  •    
  • 10g pak kei (Radix Astragali)
  •    
  • 10g dong guai (Chinese Angelica Root)
  •    
  • 6 red dates,    2 teaspoons salt
  •    
  • 500g chicken, skinned and cut into 4 large pieces600ml boiling water.
  
Preparation Method

Add water in the bottom section of a double boiler pot and bring to a boil.
Place all the herbs and the chicken in the top section of the pot and
double boil for two hours.
Keep replenishing the hot water in the bottom section of the pot when it runs low. When soup is ready, add salt to taste and serve hot.
